EAST CARBON-Opal Jackson Lemon, age 82, passed away peacefully Nov. 2, 2010 at the University of Utah Hospital in Salt Lake City.
She was born April 29, 1928 in Thompson, Utah to John and Sinda Cordova Jackson.
Married Joseph Lemon Sept. 7, 1946 in Aztec, N.M.; he passed away May 19, 1999.
Opal was a former longtime resident of Moab and for the past 20 years she resided in East Carbon. Her cooking skills were unbelievable and she’ll always be remembered as one of the best cooks around. She was an avid rock hound, who loved spending time on the desert.
Opal was an excellent story teller who loved visiting and singing with her family. Opal loved doing word find puzzles and reading. She lived for her family and will be dearly missed by them.
Survived by her two sons, Jerry (Karen) Lemon, Sunnyside; David J. (Lynn) Lemon, East Carbon; sister, Ellesa Ekker, Moab; brother, Jack (Rose) Jackson, Lincoln, Neb.; 17 grandchildren; 13 great-grandchildren and four great-great-grandchildren.
Preceded in death by her parents, two brothers, three sisters, and two great-grandchildren, Karen and Luke.
Funeral service, Friday, Nov. 5, 2010, 10 a.m., Mitchell Funeral Home (233 East Main Street) in Price. Family was at Mitchell’s Friday one hour prior to service.
